We made homemade marshmallows last weekend. I blogged about it, including the recipe, here. They're long gone! Between the girls, me (Ha! and I don't like marshmallows usually), and taking them to Care Group - they didn't last 48 hours. Actually, once we cut them, they didn't last 24 hours! I took most of them to Care Group, though, so I don't want to portray that my family ate 40 big marshmallows in a day.
They were really a lot of fun to make. At one point I was looking at the mixture thinking, "There's no way this is going to come together - we've bombed on making marshmallows." But just a couple of minutes later - the mixture turned white and was glossy and sticky. Very sticky!!! Despite how sticky it was, the clean-up couldn't have been easier. I filled the sink with hot water and put pans, bowls and utensils into the water immediately and that helped a lot. The marshmallow stuff dissolved shortly after hitting the hot water - which makes sense since it's gelatin.
A couple of friends commented on the other blog that they used a pastry bag to "pipe" the marshmallows. I might try that the next time we make them. I have a couple of ideas...just need to find time to make them and see how they work. I think I'll definitely be doing these for Christmas.
Now, I'm off to make some buttermilk cookies. I have buttermilk in the fridge that's going to go bad if I don't get something done with it quickly!
